Pho Co. Variety is a takeout-focused Vietnamese restaurant in Westbrook, Maine that also offers some indoor seating. I have tried their banh mi in the past, but it had been a while, so I stopped in to get the Lemongrass Beef Banh Mi recently while running some errands nearby. They also have several other banh mi options - some fairly standard (cold cut, pork belly) and some unique (breakfast omelet, steak bomb).
This is a large sandwich with a generous portion of beef and veggies. The bread is a nice classic banh mi baguette - light, crispy on the outside and slightly chewy inside. While Westbrook is a little out of my way most days, I will make sure to come back soon and try more of Pho Co.'s sandwiches!
